Enchiladas are great for lunchtime. Make 3 to 4 per person and serve garnished with chopped lettuce, radishes and olives.
Enchiladas Suizas
Make the enchiladas as for Enchiladas Rojas or Enchiladas Verdes but do not add beaten egg and cream to the chile sauce. Dip tortillas in the plain sauce, fry in hot lard until limp, fill and arrange in ovenproof dish. Warm the remaining sauce; pour over the enchiladas; then add 1 cup of heavy cream. Place the dish, uncovered, in a preheated 350 F oven for about 15 to 20 minutes or until hot throughout.
