
Tacos
Tacos are small tortillas stuffed with various different foods and rolled or folded in half. They can have extras added, such as salsa, according to individual taste.
The taco has been called the Mexican sandwich, but in fact the torta, which is a split bolillo (a shuttle-shaped roll) with various fillings, is the real sandwich.
For a party, set out bowls of various sauces, fresh salsa, shredded lettuce, chopped fried chorizo sausage, shredded chicken and pork, guacamole, frijoles refritos, and some other taco fillings. Serve with batches of hot tortillas to be filled according to preferences and eaten.
Possible Taco Fillings
- Tacos de pollo o de cerdo: stuff tortillas with cooked shredded chicken or pork, a little finely chopped lettuce, fresh Mexican cheese, and salsa de chile rojo or salsa verde.
- Tacos de frijol: stuff tortillas with frijoles refritos, strips of jalapeño chile, and shredded Monterey Jack cheese (or similar cheese) and serve with guacamole.
- Tacos de chorizo: Skin, chop and fry 3 chorizo sausages. Drain. Mix with small cubes of Monterey Jack or Cheddar cheese. Stuff the tortillas and serve with guacamole and chile chipotle.
- Tacos de picadillo: Make up the recipe for picadillo or picadillo de la costa using 1 pound of chopped beef. Stuff tacos and serve with guacamole.
