Tostadas are corn tortillas that have been fried flat until golden brown and crisp in hot lard or oil, and then covered with various combinations of meats, poultry, fish, sauces, chiles, etc.
Tostadas de Frijol
3 cups of Mexican black beans, cooked
1 package (8 ounce) cream cheese, cut into cubes
12 small tostadas
1 large onion, chopped
1 large avocado, cut into strips
1 canned chipotle chile, cut into strips
Heat the bean with the cream cheese, but do not allow the mixture to boil as the cheese and beans should remain separated. Spread a layer of the mixture on the tostadas, followed by a layer of onions, strips of avocado and strips of chipotle chile.
