Tostadas are corn tortillas that have been fried flat until golden brown and crisp in hot lard or oil, and then covered with various combinations of meats, poultry, fish, sauces, chiles, etc.
Tostadas de pollo
2 cups of frijoles refritos
2 freshly boiled potatoes, diced into small cubes (optional)
2 cooked chicken breasts, shredded
1 cup guacamole
shredded chesse, such as Mexican fresh cheese or Monterey Jack
canned chipotle chiles, cut into strips
Cover the tostadas with a thin layer of the beans. Layer the lettuce, potatoes (if using), chicken and guacamole. Sprinkle cheese over the tostada and place a few slivers of chipotle chile on top or on the side, whichever you prefer.
